Thai Curry

A couple of weekends ago we went to Jackson to see Les Miserables.  It was AMAZING!  While we were there we decided to take advantage of some fantastic restaurants.  Tim and I LOVE food with a lot of flavor and so we decided on Teton Thai.   We shared a platter of yellow curry, and it was so yummy!  This wasn't our first exposure to Thai food and several times in the past year I have tried to replicate it at home, only with failure!  However this past week I was finally successful.  After a lot of research I took several recipes and made my own!  It was delicious!
1/2 Pound Chicken
2 cloves garlic
1 small head of cauliflower
1 small potato
1 small zucchini
1/2 red pepper cut into thin strips
2 cans coconut milk
1 small carton of whipping cream or half & half
2 tsp. green curry paste
2 tsp. fish sauce
1 1/2 tsp. ground ginger
1/4 to 1/2 tsp. cayenne pepper (depending on how spicy you like it)
1/4 tsp. cardamom
1/4 tsp. Masala Blend
1/4 tsp. Coriander
1/4 tsp. Turmeric
1/4 tsp. Cumin
1-2 Tbsp. Curry Powder
(Adjust the spices as desired)

Cook & Dice chicken.  In a soup pot put oil and garlic, cook for about a minutes.  Add all the veggies and cooked chicken, sprinkle ground ginger over and cook a few minutes.  Add the coconut milk, curry paste, fish sauce and all of the spices.  Cook till potatoes are tender.   Serve over white rice.
