Sunday Dinner

Right now in Afton it is FREEZING!  Our high today was -2 degrees.  So to help us warm up a little I decided on making one of our favorite soups and homemade breadsticks!
Corn and Chicken Chowder
30 oz. (2 cans) corn
15 oz. (1 can) cream corn
6 - 12 slices of bacon
8 scallions
3 medium potatoes
2 Tbsp flour
3 cups milk
2 cups (1 can) chicken stock
2 tsp. Mrs. Dash
1 tsp. parsley flakes
1/2 tsp. thyme
1/4 tsp. Cayenne Pepper
4 oz. can green chiles
2 cups shredded chicken
Salt and Pepper to taste
Grated cheese, for garnish

1: In a large pot fry the bacon until crisp.  Remove from pan, leaving the drippings.  Chop bacon and set aside. 
2: Peel and chop the potatoes into bite sized pieces.  Slice the scallions very thin and separate the greens from the whites. 
3: Put potatoes and scallions pieces into the pot and cook over medium heat until the scallions have softened, 2 or 3 minutes. 
4: Sprinkle in the flour and cook, stirring constantly, for about 1 minute.
5: Pour in the milk, chicken stock, and all of the seasonings.  Stir well.  Bring to a boil and stir occasionally. 
6: Reduce heat to low and simmer for about 15 minutes or until potatoes are tender.  Add corn, chick, and green chilies.  Cook over low heat until heated through, about 5 minutes.  Garnish with more scallions, bacon and cheddar cheese!

My Favorite Breadsticks
1 Tbsp yeast
1 Tbsp honey
1 1/2 c. warm water
1 Tbsp instant malted milk
3-4 c. flour
1/4 c. buter
Parmesan Cheese

1: Combine the yeast, honey and warm water in a bowl.  Let raise for about 5 minutes.
2: Using a mixer (mine is a kitchen aid) knead the yeast mixture, malted milk and flour together until a soft dough is formed.
3: Roll the dough into 12-16 long pieces.  Place on a greased cookie sheet.
4: Pour 1/4 c. melted butter over the top and sprinkle parmesan cheese over them.
Place in a warm spot, cover with a towel and let raise for about 25 to 30 minutes.
5: Bake at 400 degrees for 15 minutes.
6: If you have left over butter I like to pour the remaining portion on the breadsticks when they come out of the oven.
