Several weeks ago I went to a class at Kitchen Kneads on how to make the Indian Oven's version of Chicken Tikka Masala. I absolutely loved the class and thought the finished product was even better. After putting a picture on Instagram, I had some people ask me for the recipe so here it is. I hope you enjoy it as much as Tim and I do!
Marinate:
2-3 lb. Chicken breast, whole
2 drops yellow food coloring
2 Tbsp. yogurt
1 Tbsp. lemon juice
1 tsp. crushed fresh garlic
1 tsp. fresh ginger
1/2 tsp. salt
1/2 tsp. turmeric
Mix all the ingredients. Add chicken breasts, and marinate for at least 2 hours (I did mine overnight). Preheat oven to 375 degrees. Brush pan with oil before putting chicken on so it doesn't stick. Bake approximately 25 minutes. Dice chicken.
Gravy:
2 Tbsp. oil
1/2 c. onions, diced small
1/2 tsp. fresh garlic
1/2 tsp fresh ginger
1 1/2 c. heavy cream
1/2 c. tomato puree or paste
1/2 c. water
1 1/2 Tbsp. garam masala
1/2 tsp. salt
1 Tbsp fenugreek leaves (you have to special order this, I left it out and it was still great)
cilantro for garnish
Put oil in the bottom of a pot and get it hot! Saute onions, garlic, and ginger in hot oil until light brown (8-10 minutes). Add garam masala and salt. (When adding spices always add liquid immediantly after or the spices burn and there flavor goes bad) Add cream, tomato puree/paste and water. At this point you could add a diced jalapeno pepper or some cayenne pepper. When it begins to boil add diced chicken and all the juices left on the cookie sheet, simmer for 15 minutes until thickened. Add fenugreek leaves and garnish with cilantro.
I don't know of how many of you like corn bread but I LOVE it! However I could never find a recipe that was super moist and yummy....until now. Make it, I promise you won't regret it.
World's Best Corn Bread
2 cups buttermilk
1 cup butter (2 sticks)
1 1/3c. sugar
4 eggs
1 tsp. soda
2 cups cornmeal
1c. flour
1 tsp. salt
Melt butter and sugar together, add eggs. Put soda in buttermilk. Then add cornmeal, flour, salt and mix. Pour into 9x13 pan. Bake at 375. In my oven it cooks for 27 minutes before it's done.
